Rotating brush rollers lift dust and stems off the surface of the fruit gently. The dry type works with brushes and air alone; the wet type adds an overhead water spray and then air drying. Alternating flat and spiral rollers lengthens the cleaning path while moving the fruit forward at the same time, with polishing that brings up its appearance before packing.
